<p>Spring is stretching its limbs, the blossom is showing off and the bees are officially back in business. Which makes this rather lovely evening at Silent Pool Gin feel impeccably timed.</p>



<p>Muddy has teamed up with Silent Pool to host <a href="https://silentpooldistillers.com/products/the-awakening-of-the-bee-s-spring-dining-experience-1" target="_blank" rel="noreferrer noopener"><strong>The Awakening of the Bees &#8211; Spring Dining Experience</strong></a>, a one-night-only celebration of seasonal flavours, botanical cocktails and live music. Note the date: it&#8217;s Friday 17 April.</p>



<p>And the best part? It&#8217;s all in support of an excellent cause: bees. <a href="https://www.beesfordevelopment.org/" target="_blank" rel="noreferrer noopener">Bees for Development</a> is a global charity that works towards transforming lives through nature-based beekeeping.</p>



<p>The event runs from 6.30pm to 9pm &#8211; an elegantly paced two-and-a-half-hour experience &#8211; and at £75 per person, it offers a beautifully curated evening that feels indulgent yet entirely justified. Here are five reasons this is one date you’ll want firmly in your diary.</p>



<h2 class="wp-block-heading" id="h-1-a-menu-full-of-botanical-brilliance">1. A menu full of botanical brilliance</h2>

<p>This is not your average supper club. The three-course menu reflects the signature botanicals of Silent Pool Gin and the fresh flavours of spring.</p>



<p>To start, heritage tomato and creamy burrata will be served with a Silent Pool rare citrus, basil and tarragon dressing. Light, aromatic and unmistakably spring. (Yes, please!)</p>



<p>The main course brings comfort with elegance: Albury honey glazed pork belly, paired with red cabbage infused with juniper and pear, creamy mashed potato and a rich jus.</p>



<p>Dessert is a Surrey Hills pavlova with lavender-infused meringue, chamomile and vanilla cream, and Silent Pool macerated strawberries — floral, fragrant and beautifully balanced.</p>



<h2 class="wp-block-heading" id="h-2-every-course-comes-with-a-gin-cocktail-as-it-should">2. Every course comes with a gin cocktail &#8211; as it should</h2>

<p>This is a gin supper club, after all.</p>



<p>Each dish is paired with a cocktail crafted by brand ambassador Antonio Franzese, who knows exactly how to coax the best from citrus, herbs and juniper. The drinks aren’t an afterthought &#8211; they’re woven into the experience, echoing the botanicals on the plate.</p>



<p>Expect thoughtful pairings, seasonal twists and at least one moment where you quietly declare your new favourite cocktail.</p>



<h2 class="wp-block-heading" id="h-3-there-s-live-jazz-funk-and-soul-to-set-the-mood">3. There’s live jazz, funk and soul to set the mood</h2>



<p>Dinner tastes better with a soundtrack, and this one comes courtesy of Saara Kaldma. Her silky blend of jazz, funk and soul adds just the right amount of atmosphere &#8211; enough to feel special, not so much that you have to shout across the table.</p>

<p>Here’s the part that elevates the evening beyond excellent food and beautifully made cocktails. All profits from The Awakening of the Bees &#8211; Spring Dining Experience will go to Bees for Development, Silent Pool’s long-standing partner charity working to transform lives through sustainable, nature-based beekeeping.</p>



<p>The evening also forms part of The Beehive Collective, a new initiative launched in May 2025 by Silent Pool Gin in partnership with leading bars, restaurants and hotels. The collective exists to raise awareness of the alarming decline in global bee populations &#8211; driven by habitat loss, harmful insecticides and climate change &#8211; and to champion meaningful, bee-friendly practices across the hospitality industry.</p>



<p>The aim is not simply to talk about the issue, but to create a platform that educates, inspires action and contributes to tangible change.</p>



<p>So while you are sipping and savouring, you are also supporting livelihoods, empowering communities and helping to safeguard pollinators worldwide. A night out that delivers both pleasure and purpose is always that little bit more satisfying.</p>



<h2 class="wp-block-heading" id="h-5-it-s-one-night-only-so-hesitation-is-risky">5. It’s one night only &#8211; so hesitation is risky</h2>



<p>The awakening of the bees takes place on 17 April from 6.30pm to 9pm and lasts around two and a half hours. A vegetarian menu is available, although other dietary requirements cannot be accommodated for this particular experience.</p>
